The blade uses Uddeholm's special alloy steel from Sweden. Dimples are formed to ensure the sharpness needed to cut food. Mr. Keido Sugihara, a custom knife craftsman, uses desert ironwood for the handmade handle.

The Uddeholm company manufactures the steel used in the Grand Chef Knife series. Established in 1670 in the Munkfors district, Sweden, Uddeholm has a history of more than 1300 years. In the field of precision rolled steel products, the company leads the world. Since quality iron ore excavated from company mines contains an extremely low amount of phosphorus and sulfur, the special steel is reputed to be of the finest in the world. The Grand Chef Knife series products use the special Swedish steel manufactured by Uddeholm and offer exceptional sharpness and abrasion and corrosion resistance for many years of service.

Mr. ItsuoDoi was born in 1948 and at 24 years of age, he became the apprentice of Mr. Keijiro Doi, his father. Following in the footsteps of his grandfather, Mr. Doi was trained in the secrets of his family’s craft, continuously producing excellent knives as a knife smith in the Sakai tradition.

Each knife is made using different techniques, and passes through the hands of various craftsmen such as knife smiths and polishers. In addition to traditional techniques, the passion and training of the craftsmen are embedded into each piece, and each one continues to receive high marks as a superior knife.
